I think that killing a Yozi should be a huge struggle.
Should Ghost-Eating Technique be enough? That depends on the players' level of combat savvy, and how much experience the ST expects them to get over the course of the campaign.
If getting to the point where you can kill a fetich is incredibly heroic in your game, then there you are: use Ghost-Eating and the Yozi's gone forever too.
If your PCs can walk up and maul Ligier, then, with or without the Ghost-Eating Technique, it might be better to give them a limited victory: Malfeas reforms, different, lesser, broken. It's no longer the same kind of obstacle it was, but if it's a sworn enemy, then maybe you need to do something Deathlord-killing-level to actually kill it.
Somewhere in between? Maybe you need to Ghost-Eat all its Third Circles, or Ghost-Eat three fetiches before it's gone forever.
I wouldn't say that Primordials have 20,000 perfect defenses a round, though. Their abilities are finite; and I vaguely suspect that their perfect defenses were more along the lines of "only a soul scoured clean and wielding a repentant blade can harm the desert Cecelyne" or "to wound She Who Lives in Her Name, one thousand must strike as one" than "I perfectly defend against all attacks this round."
Kind of like Deathlords, but a bit less uber, because the Deathlords have immortality v.2.0, developed in response to Malfean complaints that immortality v.1.0 was buggy.
